Recipes from Jewell's Kitchen These are recipes I have collected from friends, neighbors and co-workers over the years. SPINACH QUICHE 1 Pk thawed spinach souffl� 2 eggs 3 Tbsp Milk 2 Tsp chopped onion 1/2 cup sliced mushrooms 3/4 cup cooked crumbled Italian sausage 3/4 cup grated swiss cheese Pour into unbaked 9 inch pie shell and bake at 400 degrees for 25-30 minutes. Serves 4 - 6 people TUNA CASSEROLE 1 can Tuna 6 oz Can cashew nuts 1 can mushroom soup 1/4 C water 1 C celery, finely chopped 1/4 C chopped onion 1 Can Chou Mein noodles Mix all together except 1/2 can of noodles. Spread remaining noodles over top. Bake 350 degrees for 40 minutes. Good served over rice. HAMBURGER CASSEROLE 2 lb hamburger 1 onion 1 can Cream of Chicken soup 1 can Cream of Mushroom soup 1 small can green chilies 1 can taco sauce cheese and Doritos Brown chopped onion and hamburger in skillet, pour off excess fat. Add soups, chilies and taco sauce. Layer in casserole dish with crushed Doritos and grated cheese. Bake at 350 Degrees until lightly browned. CORN DISH 1 Can corn or 2 C fresh corn 1 egg dash salt 1 chopped onion 1 hot pepper, chopped 1/4 cup corn meal 3 Tbsp cooking oil or oleo 1 cup shredded cheese Cook in 350 degree oven for about 25 minutes. CHILI WITH PINTO BEANS 1 lb ground meat 3 buttons garlic 3 stalks celery, 1 large onion 1 Tbsp chili powder 1 bell pepper, chopped Chop celery, onion and garlic Combine all, brown all and add 1 small can whole kernel corn and 2 cans tomato paste. Add a little water to keep from sticking. Simmer 30 minutes. ENCHILADAS Chili Powder 2 lb hamburger meat Flour, Onion, Salt & Pepper, Cheese, Lettuce and Tomato Cook hamburger until done, drain. Add 4 to 6 Tbsp flour and stir until mixed. Mix 4 to 5 Tbsp chili powder with small water to make a paste. Pour over meat and stir in. Add water to fill skillet about 3/4 full. Add Salt & pepper and onions. Bring to a boil then simmer until thick. (If not thick, heat about 2 or 3 tsp shortening and 4 or 5 Tbsp flour to make gravy and add to meat mixture. Stir thoroughly).

EASTER STORY COOKIES A good way to spend quality time with your children and a fun activity to involve them in the story of Holy Week and Easter! To be made the evening before Easter You need: 1cup whole pecans 1 tsp. vinegar 3 egg whites pinch salt 1cup sugar zipper baggie wooden spoon tape Bible Preheat oven to 300 degrees (this is important-don't wait til you're half done with the recipe!) Place pecans in zipper baggie and let children beat them with the wooden spoon to break into small pieces. Explain that after Jesus was arrested, He was beaten by the Roman soldiers. Read John 19:1-3. Let each child smell the vinegar. Put 1 tsp. vinegar into mixing bowl. Explain that when Jesus was thirsty on the cross, He was given vinegar to drink. Read John19:28-30. Add egg whites to vinegar. Eggs represent life. Explain that Jesus gave His life to give us life. Read John 10:10-11. Sprinkle a little salt into each child's hand. Let them taste it and brush the rest into the bowl. Explain that this represents the salty tears shed by Jesus' followers, and the bitterness of our own sin. Read Luke 23:27. So far, the ingredients are not very appetizing. Add 1cup sugar. Explain that the sweetest part of the story is that Jesus died because He loves us. He wants us to know and belong to Him. Read Ps. 34:8 and John 3:16. Beat with a mixer on high speed for 12 to 15 minutes until stiff peaks are formed. Explain that the color white represents the purity in God's eyes of those whose sins have been cleansed by Jesus. Read Isa. 1:18 and John 3:1-3. Fold in broken nuts. Drop by teaspoons onto wax paper covered cookie sheet. Explain that each mound represents the rocky tomb where Jesus' body was laid. Read Matt. 27:57-60. Put the cookie sheet in the oven, close the door and turn the oven OFF. Make sure the oven is COOL, to the touch, then: Give each child a piece of tape and seal the oven door. Explain that Jesus' tomb was sealed. Read Matt. 27:65-66. GO TO BED! Explain that they may feel sad to leave the cookies in the oven overnight. Jesus' followers were in despair when the tomb was sealed. Read John 16:20 and 22. On Easter morning, open the oven and give everyone a cookie. Notice the cracked surface and take a bite. The cookies are hollow! On the first Easter, Jesus' followers were amazed to find the tomb open and empty. Read Matt. 28:1-9 The staff of e-Catholic2000 wishes you a Holy and Happy Easter! |
