Christmas Recipes from
Jewell's Kitchen



These are recipes I have collected from friends, neighbors and co-workers over the years.

HOW TO SPICE UP EVERY DAY DISHES:

Allspice: Sausages, Jamaican stews, fruit pies, honey-glazed winter squash, baked pears.

Anise: Fish and shellfish (put seeds in the poaching water), cottage cheese, cream-cheese dips, fruit pies, applesauce.

Caraway Seeds: Cabbage, pork or veal stews, roasted potatoes, sauerkraut, potato salad.

Cardamom: Cakes, pastries fruit dishes, curries, pilafs, punches, spiced wines.

Celery Seeds: Tomato juice cocktail, chicken chowder, Southwestern chicken and dishes, meat pies, cabbage and carrot slaw.

Chervil: Fish, shellfish, cream-based soups, scrambled eggs, chicken, green salads.

Coriander: Lentils, curried chicken, Indian rice pilaf, coffeecake.

Cumin: Guacamole, bean soups, Mexican dishes, black beans, curries, chili, tuna fish salad.

Fennel: Italian tomato sauces, beef stew, seafood salad.

Fenugreek: Indian curries, pilafs

Ginger: Asian dishes and stir-fries, carrot soup, sweet potatoes, apples, poached winter fruits.

Mace: White cake, chicken pie, cream sauces for vegetables.

Marjoram: Clam dip, split pea soup, roasted potatoes, vegetable salads.

Saffron: Rice dishes like paella, arroz co pollo, risotto; chicken, fish, shellfish

Sage: Turkey burgers, stuffed peppers, bean soup

Savory: Lentils, white beans, broiled veal, pork, poultry, cucumbers, goat cheese, tomato sauces.

Star anise: BBQ or roasted chicken, broths, rice pudding, poached fish or shellfish.


SPICED TEA:

1 each 18 oz. Jar of TANG
1/2 cup instant lemon-flavored Tea
1 C white sugar
1/2 C brown sugar
1 tsp cloves
1 tsp cinnamon

Mix well. Store in airtight container. Use 2 tsp to 1 cup boiling water.


LEMON SQUARES

Mix together 1-1/2 cup flour, 1/3 cup powdered sugar and 1/2 cup oleo. Spread in 9 oz. Pan. Bake 20 minutes at 350 degrees.

Beat 4 eggs and add 1-1/2 cup sugar. Beat until thick. Add 4 Tbsp flour, 1/2 cup lemon juice and 1 tsp lemon rind (rind is optional).

Pour over crust. Bake 20 minutes at 350 degree or until center sets. Sprinkle with powdered sugar. Cut in squares. Cool in pan.


RICE MEAT BALLS

1 cup Minute Rice
1/8 tsp marjoram
1 lb Hamburger
dash of pepper
1 egg, slightly beaten
2-1/2 cups tomato juice **
2 tsp grated onion
1/2 tsp sugar
2 tsp salt
condensed tomato soup plus 1 can water, if desired
**Substitute 1 can

Combine rice, beef, egg, onion, seasoning and 1/2 C tomato juice. Shape into balls and place in skillet. Add sugar to remaining juice and pour over meatballs. Bring to boil, reduce heat and simmer, covered, for 15-20 minutes.


RICE-MUSHROOM CASSEROLE

1 stick Margarine/oleo
1 cup regular rice (not instant)
2 Tbsp chopped green onions
3 Tbsp chopped green bell pepper
1 can mushrooms (drained and chopped)
1 can beef consomm� soup.

Melt oleo in oblong baking dish (8x12") Add rice and mix with oleo in bottom of dish. Sprinkle layer of green onions, bell peppers and mushrooms. Pour consomm� soup over this mixture. Then add 1 can of water. Cover tightly with foil and bake for 1 hour at 350 degrees.


CHEESE DIP

In double boiler (or microwave) melt 1/2 stick oleo Add slowly - 1/4 cup flour and 2 cups milk Heat until warm, then add 6 oz Velveeta cheese, cubed Add:

1/2 tsp garlic salt
1 tsp paprika
1-1/2 tsp chili powder
1 tsp cumin
1/2 tsp dry mustard
1 jalapeno pepper, chopped
1 tsp jalapeno juice

Cook until thick. If too thick add more milk.

A Christmas Dessert Idea from
Vickie's Kitchen



I found an easy one for the holidays, the girls were at a potluck dinner for turkey day and found this dessert.

Chocolate Chip Dream

1 package ready to bake choc.chip cookie dough spread that in a pan and bake according to directions. In an 8x8 cake pan ~Cool
1 package Instant Chocolate Pudding mixed according to directions and spread on the cooled cookie
One small container of Cool whip spread on the pudding Then sprinkle with a package of toffee chips Put in fridge to cool and set.
We put it in the freezer to set and then in the fridge. the cookie is hard to cut frozen so let it thaw if you put it in the freezer..

The Bible


I Know What the Bible Means A father was approached by his small son, who told him proudly: "I know what the Bible means!" His father smiled and replied....."What do you mean, you 'know' what the Bible means?" The son replied, "I do know!" "Okay," said his father. "So, son, what does the Bible mean?" "That's easy, Daddy....... it stands for Basic Instructions Before Leaving Earth." Leave it to a child to figure it out.

Rule Of Silence


There was a very strict order of monks who lived by a rule that permitted speaking only once on one day a year, one monk per year. When the day came around, the monk whose turn it was stood up and said, "I don't like the mashed potatoes here, they're too lumpy." And he sat down.

A year later, another monk stood up and said, "I rather like the mashed potatoes here, they're very tasty."

Another year went by and it was a third monk's turn. He stood up and said, "I'm leaving the monastery. I can't stand this constant bickering."

The Red Bicycle


Little Leroy came into the kitchen where his mother was making dinner. His birthday was coming up and he thought this was a good time to tell his mother what he wanted. "Mom, I want a bike for my birthday." Little Leroy was a bit of a troublemaker. He had gotten into trouble at school and at home. Leroy's mother asked him if he thought he deserved to get a bike for his birthday. Little Leroy, of course, thought he did. Leroy's mother, being a Christian woman, wanted! Leroy to reflect on his behavior over the last year. "Go to your room, Leroy, and think about how you have behaved this year. Then write a letter to God and tell him why you deserve a bike for your birthday." Little Leroy stomped up the steps to his room and sat down to write God a letter.

Letter # 1
Dear God:
I have been a very good boy this year and I would like a bike for my birthday. I want a red one. Your friend, Leroy

Leroy knew that this wasn't true. He had not been a very good boy this year, so he tore up the letter and started over.

Letter # 2
Dear God:
This is your friend, Leroy. I have been a pretty good boy this year and I would like a red bike for my birthday. Thank you. Your friend, Leroy

Leroy knew that this wasn't true, either. So, he tore up the letter and started again.

Letter # 3
God, I know I haven't been a good boy this year. I am very sorry. I Will be a good boy if you just send me a red bike for my birthday. Please! Thank you, Leroy

Leroy knew, even if it was true, this letter was not going to Get him a bike. By now, Leroy was very upset. He went downstairs and told his mom that he wanted to go to church. Leroy's mother thought her plan had worked as Leroy looked very sad. "Just be home in time for dinner," Leroy's mother told him. Leroy walked down the street to the church on the corner. Little Leroy went into the church and up to the altar. He looked around to see if Anyone was there. Leroy bent down and picked up a statue of the Virgin Mary. He slipped it under his shirt and ran out of the church, down the street, Into the house, and up to his room. He shut the door to his room and sat down with a piece of paper and a pen. Leroy began to write his letter to God.

Letter # 4
God,
I'VE GOT YOUR MAMA. IF YOU WANT TO SEE HER AGAIN,
SEND THE BIKE.
Signed, YOU KNOW WHO
